Bread that
speaks
for itself.

Every loaf at The Cut is built from weeks of fermentation, hand-folded dough, and a stubborn refusal to cut corners. This is baking done the slow way — in a small Westland kitchen, for a neighborhood that notices the difference.

Our story

A small kitchen
with big convictions.

The Cut started with a single question: why does bread taste like cardboard when it should taste like grain, time, and care? We opened our doors in Westland to prove that the answer is simple — slow fermentation, honest ingredients, and hands that actually know what they're doing.

We bake in small batches, every morning. Our sourdough starts from a starter we've tended for years. Our pastries are folded by hand before dawn. And our grocery section features local producers whose standards match our own.

No shortcuts. No preservatives. Just food that respects the people who eat it.

How we work

Time is an ingredient.
We just don't skimp on it.

01

Source

Flour from regional mills. Butter from local dairies. Fruit from Michigan orchards. We know where everything comes from.

02

Ferment

Dough rests. Longer than you'd expect. The flavor develops in the waiting — that's the whole point.

03

Shape

Every loaf is formed by hand. No machines, no speed runs. The shape tells you who made it.

04

Bake

Hot oven, steam, patience. We pull loaves when they're ready — not when the clock says so.
